Thursday's creation

This post is dedicated to my most recent Apple Cinnamon cake to use up all those apples that are getting close to their use by date.

Recipe courtesy of "Best Recipes from the Weekly" (Given to me by my Mum many years ago and still called on now and then - for sweets recipes at least).

4 green apples
1 cup brown sugar, lightly packed
1 cup water
125g butter
1/2cup castor sugar
2 eggs
2cups SR Flour
1tsp cinnamon
1/2 cup milk

Prepare apples (peel, core, slice) add to pan with brown sugar and water, stir till sugar dissolves, then bring to boil. Reduce heat and simmer uncovered about 7mins till apples are just tender.
Drain and reserve syrup.

Cream butter and sugar, beat in eggs one at a time. Fold in sifted flour and cinnamon (I added a little extra) alternately with milk (I needed more of this than the recipe called for too). Spread half cake mixture over greased tin, top with half of the apples. Spread remaining cake mix and decorate cake top with remaining apples. Bake in 180degree oven for 50-60mins.

Boil reserved syrup rapidly until reduced to about half, brush top of cake with hot syrup. Serve for a dessert with ice cream, custard or cream. Or if you are feeling decadent why not all three.
